Nutrition labels on food packaging: How to read them

Nutrition labels can look like tiny spreadsheets designed by someone who really loves numbers and really hates large fonts. Yet once you know where to look, the Nutrition Facts panel becomes one of the most useful tools in the grocery store. It can help you compare two cereals, discover that a “light” soup is surprisingly salty, or learn that the innocent-looking snack bag contains three servings rather than one.

The goal is not to find a perfectly virtuous food. Food does not earn a halo because it contains fiber, and a cookie does not become a personal failure because it contains added sugar. Protein is listed in grams, but a %DV is not always displayed. Rather than chasing the product with the largest possible number, consider how the food fits into the meal.

A breakfast containing 12 grams of protein may be perfectly useful when paired with milk, yogurt, nuts, or eggs. A snack bar advertising 20 grams of protein may also contain substantial added sugar or saturated fat. Read the entire panel instead of allowing one bold number to distract you like a magician waving a protein-enriched cape.

Understanding total carbohydrate and sugar

Total carbohydrate includes dietary fiber, total sugars, and other forms of carbohydrate such as starch. The sugar lines are part of total carbohydrate, not additional amounts to be added to it.

Ingredients are generally listed in descending order by weight. The first ingredient contributes the most weight to the product, followed by the second, third, and so on.
